Amazing Lemon Cookie Recipe

 

Fore-warning! This are highly addictive!

Wes actually told me I shouldn't give away this recipe, for fear that no one will come to visit us anymore :)  But we like them so much, I want to share it! 

Lemon Crinkles 

1 box of lemon cake mix 

1 egg

4 1/2 oz. of cool whip (comes usually in an 8 oz. tub, so I use just over half)

1 teaspoon lemon zest (optional, but you grate 1 tsp of lemon peel)

1 bag of white chocolate chips

1/2 cup of powdered sugar (for rolling the cookies in)


  1. Preheat oven to 350 degrees. 

  2. Mix the cake mix, egg and cool whip together.  Add lemon zest if you want. I like it because it makes it a little more lemon-y.

  3.  Mix in the white chocolate chips.  The dough will be sticky. 

    *It is a good idea to actually put the dough in the refrigerator for 1 hr. It will make it easier to work with *

  4. Form balls of dough, rolling each in the powdered sugar.

  5. Place onto a GREASED cookie sheet, about 2 inches apart.  

  6. Bake for about 10 minutes (ovens vary).  You want your cookies to "crinkle" and have cracks across the top, to be somewhat set, but not brown.  (See picture).   If you over bake them, they will turn into hard little rocks!

  7. After you take the cookies out of the oven, let them set on the pan for several minutes before transferring to a cookie sheet.  

Cool completely and enjoy!!  :)

  1. I am not much of a baker. But this hs my mouth watering! I am planning on stealing this recipe to make two batches. 1 for us Mitchells when we get settled into Savannah, Georgia. and 1 for a fee neighbors. IK am determined to make friends! :)
